Yes, the 21 definitely has better AoA than any 23, but the MLD has better AoA than the 23M. MiG-23, with the R-60Ms now a factor and it's fixed flight model it isn't even a contest. The MiG-21bis is obsolete as a top tier aircraft. Tough call now. As for variants the J-7I would be archaic and arguably weaker than the Razbam Mig-19P in every way except running for its life. The J-7D & J-7C would be pretty close to our Mig-21 in DCS, and then there are models like the J-7G which are basically Chinese F-16A's and that's about where they cap out. Don't expect any advanced BVR capabilities.
F4F has really good performances but lacks PD radar and radar guided missiles compared to other more modern variants. MiG-21MF is great right now, sitting at 10.3 BR means some sweet downtier battles. At top tier itโ€™s performing quite good, fits the meta quite well. So, up to you :)

All three MiG-29s have a much worse flight performance comparing to last patch, which makes it rather hard to dogfight with them (9-12 and 9-13) or just straightly impossible to dogfight (SMT). The very slow response and turn rate in SMT is quite unrealistic considering all the maneuver it demonstrated in a lot of airshows, mainly the MAKS airshow every year. Same applies to both 9-12 and 9-13 mtK4e.
